Aloo Methi pulav (Fenugreek and potato rice) with capsicum raita / capsicum yogurt

I was alone at home and I felt bored to cook something elaborate just for me last week. I wanted a quick recipe but my taste buds were craving for something nice and spicy. I had few potatoes and methi leaves at home so I decided to make a simple aloo methi pulav. This is a simple recipe that takes little effort yet tastes delicious! I made this dish with capsicum raita (capsicum yogurt ) last week and it was perfect!

Ingredients for the pulav:

boiled long grained rice (basmati) 1 cup

2 onions finely chopped

2 tomatoes finely chopped

1 cup methi / fenugreek leaves

3 to 4 cloves garlic finely chopped

1 boiled potato chopped into medium size pieces

1 tbsp oil

1 tbsp corriander jeera powder

1 tsp jeera

2 tsp garam masala

1/2 tsp turmeric powder

1 tsp chilly powder

2 green chillies finely chopped (optional – if you like it spicy)

salt

Method:

In a kadai , heat oil and add jeera and green chillies and garlic. When the jeera splutters, add onion and saute it it turns pale brown.


Add little salt and the chopped potatoes and saute for two minutes. Then add the chopped tomatoes , turmeric powder, chilly powder and corriander jeera powder, saute for a few minutes,  add little water and close the lid. Let the  vegetables cook. When the potatoes look cooked add the methi / fenugreek leaves and mix well. Let it cook for two minutes. Add garam masala, salt according to taste and mix well.

Now the masala is ready.Add boiled rice to it and mix well. Serve hot wit raita / yogurt

Capsicum raita / Bell peppers yogurt :

Ingredients:

curd – 1 cup

1/2 cup capsicum finely chopped

1/4 tsp turmeric powder

1/4 tsp mustard seeds

1/4 tsp asafoetida

oil

Method:

You can do this in the microwave in a jiffy!!

Take a bowl , add little oil , turmeric powder, mustard seeds, asafoetida and microwave for 30 seconds.

Add chopped capsicum , salt and microwave for 1 minute.

Add curds / yogurt to this and mix well!!

If you are not doing this in microwave- In a kadai add all the ingredients except curds and saute for a minute or two. Then add yogurt.
